Spicy Tuna Noodle Casserole
Ingredients:
Mac & Cheese mix
1 tablespoon, or two butter pats
1/4 cup milk
3 oz serving of tuna fish, drained
2 pieces of pickled jalapeño peppers, or one packet of relish
Preparation:
Prepare Mac & Cheese according to instructions, adding butter and milk as directed.
When fully cooked, mix in tuna, and jalapeños.
Microwave mixture for 1 minute
Servings: 1
Shrimp Soup
Ingredients:
1 package of chicken noodle soup
6 precooked cocktail shrimp.
1 teaspoon of cilantro flakes
Preparation:
Follow the soup package instructions. Once the soup is ready, toss into the hot soup and mix carefully with a spoon. Sprinkle cilantro over the soup.
Shrimp spoil quickly: make sure you eat them before their expiration date. Use any remaining shrimp for lunch the next day by mixing with two or three mayonnaise packets and a dash of cilantro, creating shrimp salad.
Fancy Pasta and Scallops
Large Equipment Needed: large pot, frying pan, serving dish
Preparation Time: 15 minutes
Ingredients:
1 lb. scallops
1 lb spaghetti
1/4 cup of butter (This equals one whole stick, which would be about 20 pats of butter. That’s way too many pats to walk away with at one time, so plan ahead.)
4 cloves of garlic, peeled and chopped
3 teaspoons of dried mint or basil
Preparation:
Boil water and prepare pasta according to package instructions. Drain and set aside.
Meanwhile, lightly sauté garlic in butter. Add scallops and cook just until they are opaque, about 3 minutes for each side.
Pour scallops and butter sauce over the pasta and sprinkle with dried spices. Mix and serve.
Servings: 4-6
