Pasta Puttanesca
Ingredients:
1 serving of cooked pasta
1 tablespoon capers
2 tablespoons of olive oil
1 large tablespoon of olives, chopped
pinch of dry oregano
Preparation:
Cook pasta
Mix capers, olives, and oregano with the oil.
Add pasta, toss, and serve
Rice
Large Equipment Needed: Microwave
Preparation Time: Time will depend on the type of rice that is purchased. We recommend the instant variety because it is precooked. However, below you’ll also find instructions for cooking brown rice in case you cannot find the instant variety. If you can find the instant variety, follow the instructions on the package.
General Directions for Preparing Microwave Brown Rice:
1 cup uncooked brown rice yields about 3 to 4 cups cooked rice
Ingredients:
1 cup uncooked brown rice
21/4 cups water
1 tablespoon or three pats butter
Preparation:
Add rice, liquid, oil and salt into a 3 quart microwave safe dish and cover. Cook on HIGH for 4 minutes or until the water is boiling. Switch to MEDIUM and continue to cook for 30 minutes. When done, fluff with a fork.
1 cup of rice
1/2 cup of any color beans, washed and drained
1/2 teaspoon of cumin
pinch of chili powder
pinch of dry green herbs like parsley

Prepare rice as directed.
Heat the beans in the microwave on HIGH for 15 second intervals until hot.
Mix hot rice, beans, cumin, chili powder and green herbs, and serve. |
Risotto
Large Equipment Needed: stove top, 2 large pots, a spoon
Preparation Time: 30 minutes
Ingredients:
1 cup arborio rice
1/4 cup Parmesan cheese, grated
1 tablespoon olive oil
5 cups chicken stock
1/2 cup of cooking white wine
Preparation:
Pour olive oil into one of the pots and heat over medium heat. When the pot seems warm, add rice and stir rice until grains are coated with oil.
Add cooking wine and stir constantly over medium heat until wine is absorbed.
Add 1 cup stock, stirring until liquid is absorbed. Add the remaining liquid 1 cup at a time, constantly stirring the rice. The total cooking time should be about 20 minutes. When finished, the rice will create its own creamy sauce; add additional liquid if creamier texture is desired.
Remove from heat, stir in cheese and serve immediately.
Servings: 4
Microwavable Cake
Large Equipment needed: mixing bowl, microwave oven, microwave-safe tube pan, rubber scraper, spoon, paper towel
Preparation time: 10 minutes
Ingredients:
18.25-ounce box chocolate cake mix
1 cup water
1/4 cup plus one tablespoon vegetable oil
3 eggs
1 16-ounce can prepared frosting in your favorite flavor (vanilla, chocolate, or even coconut)
Preparation:
Pour 1 tablespoon of oil onto a paper towel. Wipe down the entire pan.
Spoon frosting into the bottom of a baking pan. Set aside.
In a large bowl, mix together cake mix, water, remaining oil, and eggs until batter is smooth and glossy.
Spoon cake mixture into the pan on top of the frosting. Let the cake settle for a few minutes before cooking. Then, microwave on HIGH for 12 minutes. You will know if the cake is ready by gently inserting a fork into the middle. If it comes up clean, the cake is ready. If it comes up wet, or with batter stuck to it, continue to cook in two minute intervals until done.
Let the cake sit for 10 minutes. Then, cover the baking pan with a clean plate. Carefully turn over baking pan and let cake slip out. If you are having difficulty removing the cake, run a knife around the edges, and tap the top of the pan before shaking the cake out.
