Broccoli and Cauliflower Melt with Bacon
Large Equipment: Microwave, microwave safe bowl, knife, cutting board
Preparation Time: 10 minutes
Ingredients:
1 cup of broccoli florets (fresh or frozen)
1 cup of cauliflower florets (fresh or frozen)
4 oz of cheddar cheese
1 tablespoon of bacon bits
3 tablespoon of white vinegar, any type
1/2 cup of water
Preparation:
Place water and vinegar into a microwave safe dish, add broccoli and cauliflower and toss to coat the vegetables with the liquid.
Cover the dish with a microwave safe lid or microwave safe plastic wrap. Microwave the dish at HIGH for 4-7minutes. Broccoli should be bright green and still a bit crispy.
Remove and sprinkle the dish with cheese and bacon bits. Serve immediately.

Go Vegetarian Crazy
Not down with dining on imitation swine? Instead of adding bacon bits, bring on half a stick of butter and either a half roll of crushed Ritz crackers or six to eight sample-size cracker packets. Mix these in a small microwaveable bowl and microwave for about thirty seconds after you’ve finished the Broccoli, then, pour over the top of your main dish, along with the cheese, for an additional sixty seconds.
Storing Cheese for the Rest of the Term: Cheese is one of those foods that you would think lasts forever, but it doesn’t. Often, even unopened cheese will start to form mold in your refrigerator. To make the most out of your investment, limit the exposure to air and moisture. Soft cheeses like brie or Muenster will go bad before harder cheeses like Swiss or cheddar. Soft cheeses need to be wrapped tightly in cellophane to keep water and air out, but hard cheeses should be wrapped in parchment paper instead. If you see that your cheese is beginning to mold, throw it away.
Cranberry/Orange drink
Large Equipment Needed: Pitcher
Preparation Time: 1 minute
Ingredients:
1 cup of cranberry juice cocktail
1 cup of orange juice
Preparation:
Mix all ingredients into one large container and pour into serving glasses.

White fondue
Large Equipment: Microwave, knife
Preparation Time: 10 minutes
Ingredients:
8 oz can of sweetened condensed milk
1 firm pear, peeled, cored, and cut into thick strips
1 cup of strawberries, washed and trimmed
5 drops vanilla extract
Preparation:
Transfer the condensed milk into a microwave dish and heat on MEDIUM for 30 seconds. The condensed milk should be warm, not hot. Add vanilla extract, and stir.
Dip the fruit into the mixture with a fork.

Grilled Lamb with zucchini and mushrooms
Large Equipment Needed: electric grill, knife
Time Preparation: 20 minutes
Ingredients:
4 lamb chops (either shoulder or loin cuts)
1/4 cup fresh cilantro, stems removed and chopped
4 tablespoons of olive oil
3 zucchinis, peeled and sliced in 1/4” circles
8 mushrooms, any variety, sliced
Preparation:
Preheat electric grill for as directed.
Coat the lamb with 1 tablespoon of oil on each side.
Place the lamb chops on the grill and cook for 5 minutes. You might wish to cook it longer if you like your lamb more well done, or if the chops are particularly thick. However, remember that lamb cooks very fast.
Transfer the lamb onto a serving plate. Sprinkle the chopped cilantro on top and drizzle 1 tablespoon of olive oil. Let stand for 5 minutes before serving.
Meanwhile, place sliced zucchini and mushrooms on the grill and co08/30/2006sh and crispy texture, use less time. If you you’re your veggies very soft, cook longer.
Transfer the vegetables on to the serving plate and drizzle the remaining olive oil on top.
