Juicy Turkey breast
Large Equipment Needed: microwave, microwave safe baking pan large enough to hold the turkey breast, wax paper, and a sharp carving knife
Preparation Time: 40 minutes
Ingredients:
1 3-pound turkey breast (defrosted)
1 cup orange juice
4 tablespoons or 4 packets of soy sauce
1/2 cup maple syrup
Preparation:
Put the turkey breast in a baking dish, skin down. Cover with wax paper, and microwave at MEDIUM for 21-28 minutes, rotating the dish every 15 minutes. Since metal meat thermometers cannot be inserted in the turkey breast during microwave cooking; check doneness after 21 minutes by inserting an instant read thermometer. A turkey breast is done when the temperature in the thickest part reaches 170°F. If this temperature is not reached, but the turkey back in for the remaining 7 minutes, and check again. Repeat at 2 minute intervals if necessary.
Meanwhile, combine orange juice and soy sauce in a covered cup and shake until fully incorporated. Set aside.
In another cup, dilute maple syrup with 2 tablespoons of basting liquid, removed from the turkey pan. Baste the top of the turkey breast with the liquid and microwave on HIGH for 1 minute.
Remove the turkey from the microwave, and let stand for five minutes. Slice the turkey in 1/2” slices, working from the outside towards the bone, and pour the soy orange juice mixture over the turkey slices.

Fancy hot apple cider
Large Equipment Needed: Microwave, pitcher, microwave safe mug, spoon
Preparation Time: 5 minutes
Ingredients:
4 cups of refrigerated apple cider
2 teaspoons of cinnamon
1/2 cup orange juice
4 teaspoons or 4 packets of sugar
1 tablespoon of crystallized ginger (if you cannot find crystallized ginger, you can substitute a few peeled slivers of fresh ginger, or, if all else fails, just omit it.)
Preparation:
Pour the orange juice, apple cider, and ginger cubes into a pitcher. Pour directly into four mugs. Heat each cup on HIGH for 1 minute without boiling.
Sprinkle on top of each mug 1/2 teaspoon cinnamon and 1 teaspoon or 1 packet of sugar.

Spaghetti Squash with Cranberries and Almonds dinner
Large Equipment Needed: Microwave, microwave safe plate and bowl, plastic wrap, sharp cutting knife, fork
Preparation Time: 20 minutes
Ingredients:
1 spaghetti squash (3-4 lb)
3 tablespoons of olive oil
2 cloves of minced garlic
1/2 cup of minced cilantro
1/2 cup of sliced almonds
Preparation:
Combine garlic, cilantro, and almonds in a small bowl. Set aside.
Prick the squash 4-5 times with a small knife and put it on a microwave safe plate. Cover with a microwave save plastic wrap and cook on HIGH for 10 minutes or until the squash is soft to the touch. Allow the squash to stand covered for 5 minutes. Then, take off the plastic wrap and cut the squash in half, removing the seeds and gooey center.
Run a fork down the meat of the squash, separating the meat into strands from the skin. The strand will look like orange spaghetti. Place the squash strands into a microwave safe bowl. Gently toss in the garlic cilantro mixture. Microwave on MEDIUM for 2 minutes or until all the ingredients are warm. Serve immediately.

Oven roasted Sweet and Spicy Potatoes
Large/Special Equipment Needed: oven, baking pan, aluminum foil
Preparation Time: 10 minutes, cooking time 40 minutes
Ingredients:
6 medium sweet potatoes, peeled and cut into 1/2 inch thick slices
1/2 cup of brown sugar
1 tablespoon of cinnamon
1/4 teaspoon of c08/30/2006r 8 pats of butter
1/4 cup water
Preparation:
Preheat oven to 350 degrees.
Add water to the bottom of the baking dish, and place in the potato slices. Sprinkle with chili pepper, cinnamon and sugar. Cover baking pan with aluminum foil and bake at 350° for 25 minutes.
Uncover potatoes. If it’s not in pat form already, cut the butter into thin slices and drop over the potatoes. Recover, and cook for an additional 15 minutes.
Uncover and test with a fork. The potatoes will be done if a fork can easily pierce one.
Bake uncovered for another 5 minutes or until slightly crispy.
Servings: 6
Classic American Green Bean Casserole
Large Equipment Needed: Microwave, 1 2/4 quart microwave save casserole dish, plastic wrap
Preparation Time: 20 minutes
Ingredients:
1 can (about 10 oz) cream of mushroom soup
3/4 cup of milk
2 cans of cut green beans, drained
1 can fried onions
salt and pepper packets to taste
Preparation:
Set aside 1/2 can of fried onions. In a casserole dish, mix remaining ingredients. Cover dish with plastic wrap and cook in the microwave on HIGH 10 minutes, stirring through halfway, until all the ingredients are heated through.
Remove from microwave and uncover. Sprinkle remaining onions on top, and place back in the microwave uncovered. Cook on MEDIUM for 2 minutes. Let stand for 5 minutes before serving.
Servings: 4-6
