Peanut Butter ‘N Stuff Sandwiches
Just because you’re in college doesn’t mean that you can’t eat peanut butter sandwiches. You know you still like them! But now that you’re on your own, you can use peanut butter as a base to create a more sophisticated lunch.
Large Equipment needed: Knife Ingredients:
2 slices of bread, any kind
2 tablespoons peanut butter
1 tablespoon or 1 packet of your favorite jam
Preparation:
Assemble sandwich, just like Mom did.
Try toasting your bread first on the electric grill, or make the sandwich and grill it for 1 minute if you like it gooey.
Go Crazy Swap
Skip the jam and add up to three items from the following list to jazz up this old standard:
1/2 banana, sliced
1/2 apple, sliced
1 tablespoon or 1 packet of honey
1 small handful of raisins
1 tablespoon chocolate spread or chocolate chips
Fancy melted sandwich
Large Equipment Needed: electric grill
Preparation time: 5 minutes
Ingredients:
1 individual serving of canned or packaged tuna
2 thin slices of any kind of cheese
2 slices of any kind of packaged bread
1-2 mayonnaise packets
1 mustard packet
Preparation:
Preheat the grill as directed.
Mix tuna and one mayonnaise packet together with a fork. If it looks too dry for your taste, mix in the second packet. Then, mix in mustard packet.
Transfer the tuna mixture onto one slice of bread. Put cheese slices on top of the tuna.
Cover the tuna with the second slice of bread and place on grill. Review grilling instructions, and grill until the bread is crispy and the tuna is warm (usually 3-5 minutes).
Chicken Soup with Fresh Veggies
Ingredients:
1 package of chicken noodle soup
¼ red bell pepper, sliced
¼ cup of fresh spinach, or 1/3 block frozen
3 mushrooms, sliced
Preparation:
Follow the soup package instructions.
Once soup is ready, sprinkle the vegetables into the soup. Add spinach separately. Mix carefully until spinach is wilted or thawed.
Let stand for 1-3 minutes so that the flavors mix.
Any remaining vegetables can be used as filling for tomorrow’s breakfast omelet.
